Overnight oats were all the rage a couple years ago when I was in university, and we’re all kinda still not over them?
Although some healthy trends are fleeting and require a lot of effort ( I’m talking about you Dalgona coffee), the trusty overnight oat is very achievable and actually nutritious. I think one of the best things about overnight oats is that there are so many flavour options, which is great if you have oatmeal fatigue. I’m still in full fall mode over here, and this chai-spiced version with apples is just so cozy. It’s also become my go-to on days where I am cooking for meal prep clients, when I have an early start and I know preparing a breakfast isn’t an option. I just prep this the night before and grab it out of the fridge on my way out the door. It seriously keeps me fuelled for hours thanks to the high fibre content, and doesn’t weigh me down.
Overnight oats: A classic for a reason.
Chai-Spiced Apple Overnight Oats
1/2 cup rolled oats
1 tsp chia seeds
1 tsp pumpkin spice*
1/2 tsp vanilla extract
1/2 cup plant-based milk
1 small, or 1/2 a medium apple, diced
1 tbsp chopped pecans or walnuts
In a small jar or bowl, whisk together the oats, chia seeds and pumpkin spice. Add the milk and vanilla and stir well to combine. Top with diced apple and chopped nuts. Cover with lid or plastic wrap and allow to rest in the fridge for 15 minutes or overnight.
*Or 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp allspice, 1/8 tsp nutmeg,
