Super Salmon Salad

To me this is the ultimate in feel-good food. I always see eating fresh seafood as a treat, and it calls my name much more than a burger and fries. This dish is so simple, but that really lets you taste the food. I find many salmon recipes often have some sort of sauce or topping, but sometimes its nice just to taste the fish.

This dish doesn't even have a proper dressing, just the juice from the grapefruit and some lime. It's one of those kind-of-recipes where there's not much cooking involved, and is more of an idea than a recipe.

It's bright, flavorful, full of healthy fats, and so darn tasty. There's something refreshing about eating food stripped down to it's bare bones. Try simplifying your food, you may be surprised just how delicious it can be.

Super Salmon Salad

serves 4


4 salmon filets

spinach

1 large avocado (or 2 medium)

2 large grapefruit, peel and pith removed

2 limes


1. Preheat the oven to 400. Line a baking sheet with foil, and place salmon filets on top. Brush with oilive oil and season generously with salt and pepper. Roast in the oven until cooked through and can be flaked easily with a fork, about 15 minutes.

2. Meanwhile, remove the peel and pith from the grapefruit and divide into segments. Remove the pit and peel from the avocado and cut into thin slices.

3. To assemble divide spinach between plates, add avocado and grapefruit, top with cooked salmon, and finish with a squeeze of lime juice.
